His debut screen appearance was in an episode of the TV short Sunny Family Cult and in the short film Sunny Family Cult, both in the year 2017. This was followed by roles in the short films Nobody Knows (2017), Not Me (2018), Deviant (2018), etc., and in the episodes of the TV series The Politician (2019), Solve (2019), Acting for a Cause (2020), among others.

Finally, Rudy Pankow was cast as JJ Maybank in the Netflix drama series Outer Banks. He appeared on the show for a total of 20 episodes, until 2021 and is considered his breakthrough role. Since then Rudy Pankow has starred in the films Uncharted (2022) as Young Sam, The Crusades as Leo Grecco, Space Waves as Joey Kite, Chocolate Lizards as Erwin Vandeveer, and in the short film Lift Off (2021) as Danny.
